Remember the other day during our Mom-to-Mom Radio Show live-recording on Freezer Meals when Sheri told us about how her amazing family prepared dinner while she was with us online? Well, I have been CRAVING this recipe every since. She was a darling and sent it to us for today’s post. I have a sneaky feeling that you are going to want to try this one too. So, here you it is. Give a try dear friends….
9×13 pan (I like glass) in a 350 degree oven for 35-45 min.
1 # of ground turkey, beef or chicken
1/2 cup of chopped onions
***Brown and drain the grease
Add:
1 15 oz can refried beans
1 8 oz can tomato sauce
1 package of taco seasoning
1 4 oz can of chopped, MILD chilies (those fire loving diners can add spicy sauce and such to their own)
3/4 cup to 1 cup of water
Simmer until nice and bubbly
Need:
6-8 tortillas
2 cups shredded Mexcian mix cheese or cheddar
Layer the bottom of the pan with enough tortillas to cover it-can tear to fit (added advice here-spray your pan bottom with Pam to avoid stickage problems).
Then add 1/2 meat mix, (at this point, you can add a thin layer salsa to cover the meat, if you wish), the 1/2 cheese. Repeat layers.
At this point-can freeze or bake. Top with favorites: sour cream, taco sauce, chopped onions, salsa
Absolute family favorite and very easy and hardly takes any time.
