Ok! I have a new yummy! Craig, from Coffeeology, came into the coffee shop today (ON HIS OFF DAY!) with an absolutely DELIGHTFUL batch of Sweet Potato Biscuits for me! I am SOoooo blessed!!! Yes! I have shared a couple–but, SERIOUSLY wanted to eat them all by myself! They are SUPER! The rest of this batch are MINE! MINE! MINE! (Ok…he did give the recipe so I can make them for those I love! ha!)
He was telling us about them the other day–they have a history around here. They are the recipe of Alabama. Bet ya didn’t know that?! Coffeology used to serve them every day to their customers–I may have to nag them to add them to the menu again! They are nice, smooth, and you are guaranteed to crave them. So, give them a try and regularly make a batch and think of us. Yum! Yum!

Ingredients:
1-15 oz. can Bruce’s Yams (cut sweet potatoes in syrup
2-packs Great Value Quick Biscuit Mix
3-Tbs melted butter
1-Tbs ground cinnamon
2-Tbs granulated sugar
Directions:
Preheat oven to 450 degrees. Using a fork, mash the yams into small chunks. Mix the biscuit mix into the pureed yams. Using a spoon drop about 3 Tablespoons of dough onto cookie sheet, arranging about 2 inches apart. Bake 10-12 minutes.
Mix sugar, cinnamon, and melted butter. After removing cooked biscuits from oven, brush biscuit tops with butter mixture.
